2 C. rice<\/p>\n
1\/2 lbs bacon, sliced into 10 cm wide pieces<\/p>\n
1 small head of lettuce, thinly sliced such as Romain Lettuce or Green Leaf<\/p>\n
1 pint cherry tomatoes, halved<\/p>\n
<\/p>\n
1 small ripe avocado<\/p>\n
1 C. roughly chopped cilantro<\/p>\n
1\/4 C. fresh lime juice from 3-4 limes<\/p>\n
1\/4 C. olive oil<\/p>\n
1\/2 tsp cumin<\/p>\n
1\/4 tsp chili powder<\/p>\n
1\/4 tsp salt<\/p>\n

Prepare rice as per package instructions. Set aside. Cook bacon in a medium skillet over medium-high heat until browned and crispy, stirring occasionally for about 5 minutes. Remove from pan and drain on paper towel. Set aside. Dressing: Place avocado, cilantro, lime juice, olive oil, cumin, chili powder, and salt in a blender. Mix on high until smooth.
