Lemon Juice<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1 1\/3 T. grated Lemon Rind<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\">\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">3 Egg Whites<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1\/4 tsp. Cream of Tartar<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">6 T. Sugar<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\">\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Heat oven to moderately hot (400 degrees).<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Mix sugar and cornstarch in saucepan.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Slowly stir in water.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Stir constantly over moderate heat until mixture thickens and boils.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Boil 1 minute.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Slowly stir half of the mixture into the egg yolks, then beat back into hot mixture in saucepan.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Boil one minute longer, stirring constantly.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Take from heat.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Stir until smooth.<span style=\"mso-spacerun: yes;\">\u00a0<\/span>Blend in butter, lemon juice and rind.<span style=\"mso-spacerun: yes;\">\u00a0<\/span>Pour into baked pie shell.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Make a meringue of the 3 egg whites, cream of tartar and 6 T. sugar.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Spread over filling, sealing to edge.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Bake 8 to 10 minutes until delicately browned.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Cool at room temperature away from drafts.<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\">\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">9&#8243; Baked Pie Shell<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\">\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1 C. sifted Flour<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1\/2 tsp. Salt<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1\/3 C. Shortening<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">2 T. Water<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\">\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Heat oven to very hot (475 degrees).<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Mix flour and salt and cut in shortening.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Sprinkle with water; mix well with fork.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Round into smooth ball; flatten slightly.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Roll out 1\u00e2\u20ac\u009d larger than inverted pie pan.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span>Ease into pan.
