Cook on low heat to dissolve the sugar. Then bring to a boil. Add the cream and cook approximately 3-4 minutes. Add in the butter bit by bit. Scrape vanilla beans then add to mixture. Cook, stirring constantly, until temperature reaches 248\u00b0 F.\u00a0 Pour onto a half bakers sheet pan (about 13-by-18 inches) that has been lined with parchment paper and lightly buttered or coated with a nonstick spray.
