The recipe doubles very well.<\/p>\n<p>&nbsp;<\/p>\n<p>1 cup immature male cattail flowers (green), stripped from the stalk<\/p>\n<p>1 cup blanched fresh corn kernels<\/p>\n<p>\u00bc cup flour<\/p>\n<p>1 tsp. baking powder<\/p>\n<p>1\/8 tsp. salt<\/p>\n<p>\u00bc tsp. chile flakes<\/p>\n<p>\u00bc cup plain yogurt<\/p>\n<p>1 large egg, beaten<\/p>\n<p>2 T. butter<\/p>\n<p>&nbsp;<\/p>\n<p>Place the cattails, corn flour, baking powder, salt and chile in a bowl. Make a well in the center and add the yogurt and beaten egg. Stir well. If the mixture seems too dry, add a little more yogurt. Heat a skillet over medium-high heat and melt some of the butter to coat the bottom. Scoop a spoonful of the thick batter into the pan. Repeat, making sure not to crowd the pan. When some bubbles in the surface of the griddlecakes pop, flip them over and cook the other side until golden, about 4 minutes. Keep warm in a folded napkin. Serve warm.
