Parmesan, shaved or coarsely grated<\/p>\n<p>sea salt and freshly ground black pepper<\/p>\n<p>&nbsp;<\/p>\n<p>Give the peaches a good coating of olive oil and season with salt and pepper. Place a griddle pan over a high heat and sear the peaches on each cut surface until caramelized. Place on a chopping board to cool a little. Slice the peaches and arrange over a platter or individual plates. Toss the watercress with olive oil and vinegar or lemon juice to taste, then add to the peaches.
