Add a large pinch of salt to the egg whites and beat with a mixer on low speed until stiff peaks form, 2 to 3 minutes. Dollop 4 large spoonfuls of the egg whites onto a parchment-lined baking sheet and make a well in the center of each. Bake the egg whites at 350\u02da until firm and dry, about 6 minutes. Bake at 325\u02da until the egg whites are set but the yolks are still runny, 15 to 20 minutes.
