Pour through a strainer or chinois and press out the liquid. Discard the solids. Adjust sweetness\/tartness\/bite* to taste. Stir the lime zest into the liquid. Pour into Popsicle molds. Freeze until ready to serve. *Depending on the sweetness of your watermelon, you may want to add a little more sugar.
