3 Granny Smith Apples (cored and grated, with skin on)<\/p>\n
2 cup ml Cream<\/p>\n
1 cup Milk<\/p>\n
4 Egg Yolks<\/p>\n
1\/2 Caster Sugar<\/p>\n
2 tablespoons Lemon Juice<\/p>\n

Place the cream and milk in a saucepan, heat until just below boiling point. In a mixing bowl, beat together the egg yolks and sugar until thick and pale. Whisk 2 tablespoons of the hot cream and milk into the egg mixture. Slowly add the rest of the cream and milk, whisking as you go. Return the mixture to the saucepan and cook over a low heat, stirring for 8 minutes or until the mixture coats the back of the spoon. Pour into a bowl and refrigerate until cool. Place the lemon juice in a bowl and combine with the apple. Add the cooled cream mixture, ensuring it is well combined. Pour into an ice-cream maker and make according to manufacturer’s instructions. Alternatively, pour mixture into a metal bowl and place in the freezer for 2 hours or until set around the edges, but soft in the middle.
