I added chia seeds to soak up the liquid (I do the same with casseroles and soups\u00e2\u20ac\u00a6a few tsp. get everything nice and thick again).<\/p>\n<p>&nbsp;<\/p>\n<p>1 tsp. olive oil<\/p>\n<p>2 eggs<\/p>\n<p>1 tsp. chia seeds<\/p>\n<p>Basil and oven roasted tomatoes<\/p>\n<p>sea salt and black pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>Beat eggs for one minute then add chia seeds. Warm olive oil in omelet pan. Pour mixture in and swirl until thinly covered. Cook on medium heat and then fold. Remove from pan and serve with basil and tomato.
