1 pinch sea salt<\/p>\n
Freshly ground black pepper<\/p>\n
2 T. extra-virgin olive oil<\/p>\n
1 pound sweet pea tendrils, washed and dried, thick stems discarded<\/p>\n
2 carrots, peeled and shaved into thin ribbons with a mandoline or horizontal vegetable peeler<\/p>\n
6 radishes (such as French breakfast or icicle), thinly sliced<\/p>\n
1\/2 Vidalia or other sweet onion, thinly sliced<\/p>\n
<\/p>\n
In a small bowl, combine the vinegar, mustard, salt, and pepper to taste. Slowly whisk in the olive oil until a light emulsion has formed. In a large serving bowl, combine the tendrils, carrots, radishes, and onion.
