{"id":2749,"date":"2006-07-22T22:42:02","date_gmt":"2006-07-23T05:42:02","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=2749"},"modified":"2006-07-22T22:42:02","modified_gmt":"2006-07-23T05:42:02","slug":"citrus-couscous-salad","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=2749","title":{"rendered":"Citrus Couscous Salad"},"content":{"rendered":"<p>2 C. fresh orange juice, divided<br \/>\n1\/2 C. water<br \/>\n1 tsp. salt<br \/>\n1 (10-oz.) package couscous (about 1 2\/3 C.)<br \/>\n1\/2 C. dried apricots, sliced<br \/>\n1\/2 C. dried currants<br \/>\n2 T. red wine vinegar<br \/>\n1 C. chopped seeded cucumber<br \/>\n3\/4 C. chopped green onions<br \/>\n1\/2 C. coarsely chopped pistachios<br \/>\n1\/4 C. chopped fresh mint<br \/>\n1\/4 C. fresh lemon juice<br \/>\n2 T. extra virgin olive oil<\/p>\n<p>Bring 1 1\/2 C. orange juice, water, and salt to a boil in a medium saucepan; gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Place couscous in a large bowl.  Combine 1\/2 C. orange juice, apricots, currants, and vinegar in a small saucepan; bring to a boil. Remove from heat; let stand 15 minutes. Drain and discard cooking liquid.
