{"id":2731,"date":"2006-07-13T00:28:34","date_gmt":"2006-07-13T07:28:34","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=2731"},"modified":"2006-07-13T00:28:34","modified_gmt":"2006-07-13T07:28:34","slug":"soft-shrimp-tacos-with-tropical-salsa","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=2731","title":{"rendered":"Soft Shrimp Tacos with Tropical Salsa"},"content":{"rendered":"<p>Salsa:<br \/>\n1\/4 C. chopped green onions<br \/>\n1 T. chopped fresh cilantro<br \/>\n1 T. canned chopped green chiles<br \/>\n1 T. lemon juice<br \/>\n1 (11-oz.) can mandarin oranges in light syrup, drained<br \/>\n1 (8-oz.) can pineapple tidbits in juice, drained<\/p>\n<p>Tacos:<br \/>\nCooking spray<br \/>\n1 C. yellow bell pepper strips<br \/>\n1 C. vertically sliced red onion<br \/>\n1 garlic clove, minced<br \/>\n1 1\/2 lb. medium shrimp, peeled and deveined<br \/>\n1 C. chopped tomato<br \/>\n1\/2 tsp. ground cumin<br \/>\n1\/2 tsp. chili powder<br \/>\n2 T. chopped fresh cilantro<br \/>\n8 (6-inch) flour tortillas<br \/>\n1 1\/4 C. (5 oz.) shredded reduced-fat Monterey Jack cheese<\/p>\n<p>To prepare the salsa, combine the first 6 ingredients in a bowl. Cover and chill. To prepare tacos, place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add bell pepper, onion, and garlic; saut\u00e9 2 minutes. Add shrimp, tomato, cumin, and chili powder; saut\u00e9 3 minutes or until shrimp are done. Stir in cilantro.
