Cold Water<\/p>\n<p>\u00c2\u00bc C. Salt<\/p>\n<p>1\/8 C. Sugar<\/p>\n<p>1 lb. Pork Tenderloin<\/p>\n<p>2 T. EVOO<\/p>\n<p>2 cloves Garlic, crushed<\/p>\n<p>1 dried Red Chile, crushed<\/p>\n<p>1 tsp. Cumin<\/p>\n<p>1 tsp. ground Fennel<\/p>\n<p>1 tsp. Spanish Paprika (pimenton dulce)<\/p>\n<p>Juice from 1 Lemon<\/p>\n<p>2 T. chopped Flat Leaf Parsley<\/p>\n<p>1 T. Dry Sherry<\/p>\n<p>Skewers<\/p>\n<p>&nbsp;<\/p>\n<p>To make the brine, whisk salt and sugar in cold water until completely dissolved. Place tenderloin in brine and place in refrigerator for 1 1\/2 hours.\u00c2\u00a0 Meanwhile, mix all remaining ingredients in a large Ziploc bag, set aside while brining to allow flavors to mingle.\u00c2\u00a0 After brining, remove pork and cut into \u00c2\u00be\u00e2\u20ac\u009d cubes.\u00c2\u00a0 Add pork to Ziploc bag with marinade.\u00c2\u00a0 Flip bag a few times, massage pork around to coat each piece in the marinade.\u00c2\u00a0\u00c2\u00a0 Place in refrigerator and allow to sit at least 1-2 hours to overnight.\u00c2\u00a0 When ready to cook, preheat broiler until very hot.\u00c2\u00a0 Thread pork on skewers and broil 10 minutes, turning often to prevent overcooking any one side.\u00c2\u00a0 Remove to serving dish and cool 10 minutes before serving.<\/p>\n<p>&nbsp;<\/p>\n<p>From Easy Tapas<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pinchitos Morunos &#8211; Spicy Moorish Kabobs &nbsp; 2 qt.
