{"id":24439,"date":"2018-12-09T23:43:47","date_gmt":"2018-12-10T06:43:47","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=24439"},"modified":"2018-12-19T23:58:41","modified_gmt":"2018-12-20T06:58:41","slug":"ways-to-enjoy-fresh-cranberries","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=24439","title":{"rendered":"Ways to Enjoy Fresh Cranberries"},"content":{"rendered":"<p><a href=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright  wp-image-24440\" src=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-2.jpg\" alt=\"\" width=\"268\" height=\"348\" srcset=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-2.jpg 305w, https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-2-231x300.jpg 231w\" sizes=\"auto, (max-width: 268px) 100vw, 268px\" \/><\/a>Ways to Enjoy Fresh Cranberries<\/p>\n<p>&nbsp;<\/p>\n<p>Cranberries have a special place in my heart.\u00c2\u00a0 The best place that I lived while growing up was perched on the edge of a cranberry bog in a tiny town in northwest Washington, near the coast.\u00c2\u00a0 (My love of blueberries started back then too, with several bushes in the back yard).\u00c2\u00a0 It wasn&#8217;t that we ate them; I don&#8217;t think we considered them food at my tender age, hah! but on the bog was a magical place to grow up.<\/p>\n<p>In a smoothie: Freeze a bag of fresh cranberries, then whirl some with frozen blueberries, vanilla-flavored yogurt, orange juice, and a little honey.<\/p>\n<p>In pancakes or muffins: Substitute 3\/4 C. fresh cranberries and 1\/2 C. chopped dotes for each C. blueberries in your favorite pancake or muffin recipe.<\/p>\n<p>In a granita: Simmer 2 C. water, I C. fresh cranberries, 3\/4 C. sugar, and 1 tsp. grated orange peel until cranberries pop. Puree in a blender, strain, and freeze until firm, then scrape with a fork to create fluffy crystals.<\/p>\n<p>In dressing for roast poultry: Add a handful of fresh cranberries, some chopped apples, toasted pecans, sage, and a little maple syrup to a bread stuffing mix.<\/p>\n<figure id=\"attachment_24441\" aria-describedby=\"caption-attachment-24441\" style=\"width: 374px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-to-enjoy.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-24441\" src=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-to-enjoy.jpg\" alt=\"\" width=\"374\" height=\"561\" srcset=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-to-enjoy.jpg 550w, https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2018\/12\/ways-to-enjoy-200x300.jpg 200w\" sizes=\"auto, (max-width: 374px) 100vw, 374px\" \/><\/a><figcaption id=\"caption-attachment-24441\" class=\"wp-caption-text\">A fresh cranberry salsa over cream cheese.<\/figcaption><\/figure>\n<p>In chutney: Cook fresh cranberries with some golden raisins, brown sugar, a little cider vinegar, minced ginger, star anise, ground cinnamon, ground cloves, and pepper for about 5 minutes.<\/p>\n<p>Cranberry Ice: Place cranberries into the bottom on a bundt (or other decorative) pan, add water and freeze. A decorative floating ring to spice up a holiday punch.<\/p>\n<p>Cranberries are too tart for most people to want to eat them out of hand, but you can sweeten them and use them along with other fruits in a fruit salad or toss a handful into a lightly sweetened smoothie. Chop cranberries and toss with sugar, then allow to macerate briefly if you would prefer a sweeter taste.
