Water<\/p>\n<p>\u00c2\u00bc tsp. Salt<\/p>\n<p>Nonstick Cooking Spray<\/p>\n<p>8 ounces uncooked Turkey Sausage Links, chopped or crumbled<\/p>\n<p>\u00c2\u00bd C. chopped Red Onion<\/p>\n<p>4-6 T. Water<\/p>\n<p>2 tsp. Worcestershire Sauce<\/p>\n<p>1 tsp. Balsamic Vinegar<\/p>\n<p>1-2 tsp. Sriracha Sauce<\/p>\n<p>4 Eggs<\/p>\n<p>Fresh Italian Parsley, Black Pepper, or other seasonings<\/p>\n<p>&nbsp;<\/p>\n<p>In a large skillet combine sweet potato, the C. water, and salt. Bring to boiling; reduce heat. Simmer, covered, 5 to 8 minutes or just until tender. Drain. Spray the same skillet with cooking spray. Add sausage; cook and stir over medium heat until browned. Stir in onion and the 4-6 T. water, scraping up browned bits from bottom of skillet. Cook, covered, 2 minutes. Stir in the cooked sweet potato and the next three ingredients (through sriracha sauce). Cook and stir until potato is heated. Using the back of a spoon, make small indentations in the sweet potato mixture. Break an egg into each indentation. Cover and cook 2 to 3 minutes or until egg whites are set and yolks are starting to thicken. If desired, sprinkle with parsley and\/or pepper.<\/p>\n<p>&nbsp;<\/p>\n<p>Can also roast sweet potato in oven, tossed in a little melted coconut oil for about 10-15 minutes.
