Sprinkle chops lightly with pepper; add to skillet. Cook about 5 minutes or until chops are slightly pink in center, turning once. Remove chops; cover to keep warm. Stir remaining butter and the ginger into skillet; add water. Bring to boil; stir in stuffing mix just until moistened. Top with chops. Spoon preserves over chops.
