{"id":24063,"date":"2018-08-23T21:55:21","date_gmt":"2018-08-24T04:55:21","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=24063"},"modified":"2018-12-20T23:36:57","modified_gmt":"2018-12-21T06:36:57","slug":"roasted-red-pepper-tomato-soup","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=24063","title":{"rendered":"Roasted Red Pepper Tomato Soup"},"content":{"rendered":"<p>Roasted Red Pepper Tomato Soup<\/p>\n<p>2 tsp. olive oil<br \/>\n\u00c2\u00bd C. chopped onion<br \/>\n2 garlic cloves, minced<br \/>\n1 medium carrot, finely grated<br \/>\n2\/3 C. roasted red peppers, chopped<br \/>\n1 (14-ounce) can no-salt diced tomatoes<br \/>\n1 (14-ounce) reduced-sodium chicken broth<br \/>\n1 tsp. dried basil<br \/>\n\u00c2\u00bc tsp. black pepper<br \/>\n\u00c2\u00be tsp. cornstarch<br \/>\n1 C. fresh spinach leaves, cut into \u00c2\u00bd inch ribbons<br \/>\n\u00c2\u00bc C. crumbled reduced fat feta cheese<\/p>\n<p>Heat the oil in a medium soup pot over medium heat. Add the onion and saut\u00c3\u00a9 3 to 4 minutes, or until slightly softened and translucent. Add the garlic and carrot, saut\u00c3\u00a9 another 2 minutes, and then add the red peppers, tomatoes, broth, basil, and black pepper. Bring to a boil, reduce heat and simmer for 10 minutes. Transfer the hot soup to a blender, or use an immersion blender, and blend until smooth. Mix the cornstarch with one 1 T. of water, return the pureed soup to the pot if using a blender, and stir in the cornstarch mixture. Bring the bisque to a low simmer for 1 to 2 minutes until thickened and warm. Stir in the spinach and simmer one additional minute to wilt spinach.<\/p>\n<p>Crumble feta on top of soup just before serving. Jars of roasted red peppers come in many sizes. An 8-ounce jar, drained, yields about 2\/3 C..
