Potato Starch (or cornstarch)<\/p>\n<p>Salt<\/p>\n<p>Lemon Wedges<\/p>\n<p>&nbsp;<\/p>\n<p>In medium bow, stir together soy sauce, wine, sugar, ginger and garlic until sugar is dissolved.\u00c2\u00a0 Add chicken, toss until well coated, and let marinate for 30 minutes to an hour at room temperature, or up to overnight in the refrigerator.\u00c2\u00a0\u00c2\u00a0 If you have refrigerated, allow to rest 30 minutes at room temperature before proceeding.\u00c2\u00a0 Pour oil into heavy bottomed saucepan to a 1\u00e2\u20ac\u009d depth and heat over medium high until it reaches 350.\u00c2\u00a0 Line large plate with paper towels and put potato starch in medium bowl.\u00c2\u00a0 Transfer chicken to starch, allowing excess marinade to drip away first and toss until coated.\u00c2\u00a0 Don\u00e2\u20ac\u2122t worry about any excess starch.\u00c2\u00a0 When oil is ready, add about half the chicken, one piece at a time, and cook, stirring and turning occasionally, until just cooked through and golden brown, 3-5 minutes.\u00c2\u00a0 Using spider or tongs, transfer to plate to drain and sprinkle with salt.\u00c2\u00a0 Repeat with remaining chicken, letting oil come back up to temperature between bathes.\u00c2\u00a0 Serve with lemon wedges.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Japanese-Style Fried Chicken 3 T.
