Thinly sliced, peeled potatoes<br \/>\n5 oz. Ground Turkey Breast<br \/>\n1\/2 C. Diced Onion<br \/>\n1\/2 C. Diced Green Bell Pepper<br \/>\n1\/2 C. Sliced Carrot<br \/>\n1 Garlic Clove, minced<br \/>\n1 C. Canned Tomatoes, chopped, liquid reserved<br \/>\n1 T. Chopped Parsley<br \/>\n1\/4 tsp. Thyme<br \/>\n1\/4 tsp. Pepper<\/p>\n<p>In nonstick skillet, heat chicken broth.  Add potatoes and turkey.  Cook over high heat, stirring constantly, until turkey is cooked through.  Transfer to plate and set aside for now.  Add chicken broth to pan.  Add onion, bell pepper, carrot and garlic and saut\u00e9 over high heat until tender crisp, about 2-3 minutes.  Return meat-potato mixture to the pan.  Add remaining ingredients; bring to a boil.
