{"id":2362,"date":"2005-02-07T17:35:14","date_gmt":"2005-02-08T00:35:14","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=2362"},"modified":"2008-10-03T09:32:43","modified_gmt":"2008-10-03T16:32:43","slug":"spicy-basil-shrimp","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=2362","title":{"rendered":"Spicy Basil Shrimp"},"content":{"rendered":"<p>1 tsp. white peppercorns<br \/>\n2 garlic cloves, finely chopped<br \/>\n1 1\/2 T. coarsely chopped cilantro<br \/>\n1 T. minced fresh ginger<br \/>\n1 or 2 fresh Thai or serrano peppers, minced<br \/>\n1 1\/2 tsp. finely grated lime zest<br \/>\n1 tsp. salt<br \/>\n2 T. unsaturated vegetable oil like canola or olive oil<br \/>\n1 pound medium or large shrimp, shelled and deveined<br \/>\n2 T. soy sauce<br \/>\n1\/2 C. torn Italian fresh basil leaves<br \/>\n1\/2 C. torn fresh mint leaves<\/p>\n<p>In a small dry skillet, toast the peppercorns over moderate heat just until fragrant, about 1 minute. Transfer to a mortar and coarsely crush. Add the garlic, cilantro, ginger, peppers, lime zest and salt and pound to a coarse paste. Heat the oil in a large skillet. Add the paste and stir-fry over high heat for 30 seconds. Add the shrimp and stir-fry until opaque throughout, about 2 minutes. Stir in the soy sauce.
