{"id":2360,"date":"2005-02-07T17:32:09","date_gmt":"2005-02-08T00:32:09","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=2360"},"modified":"2010-05-17T16:31:20","modified_gmt":"2010-05-17T23:31:20","slug":"chicken-in-shells","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=2360","title":{"rendered":"Chicken in Shells"},"content":{"rendered":"<p>18 jumbo pasta shells<br \/>\n1 8-ounce package light cream cheese<br \/>\n3\/4 C. skim milk<br \/>\n1\/2 C. roasted sweet red peppers drained, chopped or one 4-ounce jar diced pimiento, drained (no oil pack)<br \/>\n3 T. grated Parmesan cheese<br \/>\n2 C. diced cooked chicken breast<br \/>\n1 10-ounce package frozen chopped broccoli, thawed and drained<br \/>\n2 T. green onion, thinly sliced<br \/>\n1\/4 tsp. fresh ground black pepper<\/p>\n<p>Cook pasta shells according to package directions. Rinse with cold water; drain well. In a heavy small saucepan stir light cream cheese and 1\/4 C. of the milk over medium-low heat until smooth. Stir in remaining milk. Stir in sweet peppers or pimiento and Parmesan cheese; heat through. In a large bowl stir together 3\/4 C. of the sauce (place remaining sauce aside), the chicken, broccoli, onion, and black pepper. Using a small spoon, stuff shells with 2 to 3 T. filling. Place in a 3-quart rectangular baking dish. Bake, covered, in a 350 degree F oven for 30 minutes or until heated through. To serve, cook and stir remaining sauce over low heat until heated through. Put 3 shells on each serving plate. Spoon sauce over shells.
