Line a roasting pan (or cookie sheet) with foil and spray with non-stick spray. Combine the lemon (or lime) juice, mustard, oil, garlic, salt, coriander and cayenne in a small bowl. Rub the mixture all over the fish. Place the fish skin-side down* in the roasting pan and roast until an instant read thermometer inserted into the center reads 125\u00baF, 15-20 minutes, depending on the thickness of your fish.
