Olive Oil<br \/>\n1 red pepper, sliced in strips<br \/>\n1 green pepper, sliced in strips<br \/>\n1 medium onion, chopped<br \/>\n2 cloves garlic, minced<br \/>\n3\/4 C. sliced mushrooms<br \/>\n1 small zucchini, sliced<br \/>\n1 small eggplant, cubed<br \/>\n3 C. of raw spinach<br \/>\n1\/2 C. parmesan cheese<br \/>\n1\/4 C. milk<br \/>\nSalt and pepper<\/p>\n<p>Cook gnocci according to package directions. Put oil in a large pot and saut\u00e9e onion and garlic on medium heat about 3 minutes, add peppers and saut\u00e9e 5 minutes more. Add remaining veggies, cover and turn to low heat for 10-15 minutes or until tender.  Add cooked gnocci, milk, parmesean and salt and pepper.
