Sprinkle snapper fillets with 1 tsp. OLD BAY\u00ef\u00bf\u00bd seasoning. Place fillets on greased baking sheet. Season shrimp with 1 tsp. OLD BAY\u00ef\u00bf\u00bd and place in saucepan. Add 1\/2 C. water and bring to a boil. Cover and let boil for 5 minutes, drain. Peel, devein, and coarsely chop shrimp. Saut\u00ef\u00bf\u00bd onion in butter until tender. Add the chopped shrimp. Bake the fillets in a 400\u00ef\u00bf\u00bdF oven 10-12 minutes. Remove the fish from the oven and place an equal amount of shrimp stuffing mixture in the center of each fillet. Top each fillet with 1\/4 C. shredded cheese. Preheat broiler and broil until the cheese melts, about 1 minute.
