Extra Virgin Olive Oil, divided<br \/>\n1 12 oz. Can SPAM, diced into \u00c2\u00bd inch squares<br \/>\n3 Cloves Garlic, minced<br \/>\n2 C. Mahatma Short Grained Valencia Rice<br \/>\n8 C. Chicken Stock, warmed<br \/>\n\u00c2\u00bd tsp. Salt<br \/>\n\u00c2\u00bd tsp. Fresh Cracked Pepper<br \/>\n1 \u00c2\u00bd C. Frozen Green Peas<br \/>\nParmesan Cheese, grated<\/p>\n<p>Add two T. olive oil into a skillet over medium high heat. Add SPAM, cook for a minute or two, until browned, stir well, and cook for another few minutes; remove from pan. Next, add the remaining oil followed by the garlic; saut\u00c3\u00a9 1 minute. Mix in the rice, and using a wooden spoon, mix the rice and coat the grains in oil, 2 minutes. Begin adding 1 C. stock at a time, allowing the mixture to simmer until more broth is needed; keep stirring. Continue in this manner until the rice is al dente and creamy, approximately 25 \u00e2\u20ac\u201c 30 minutes. Note: Not all of the broth may be used. When the mixture is creamy and the rice is cooked, fold in the peas and cooked Spam until heated through.
