{"id":1993,"date":"2008-11-13T20:51:32","date_gmt":"2008-11-14T03:51:32","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=1993"},"modified":"2008-11-11T22:13:30","modified_gmt":"2008-11-12T05:13:30","slug":"indian-chicken-curry-2","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=1993","title":{"rendered":"Indian Chicken Curry"},"content":{"rendered":"<p>2 tsp. curry powder<br \/>\n2 tsp. chili powder<br \/>\n2 tsp. ground red pepper<br \/>\n1 tsp. salt<br \/>\n1 tsp. ground coriander<br \/>\n1 tsp. ground ginger<br \/>\n1 tsp. ground cumin<br \/>\n1 tsp. ground cinnamon<br \/>\n3 T. butter or stick margarine<br \/>\n1 C. chopped onion<br \/>\n2 cloves garlic, minced<br \/>\n1 lb. skinned, boned chicken breast, cut into 1-inch cubes<br \/>\n1 (8 ounce) container plain fat-free yogurt<br \/>\n1 (6 ounce) can tomato paste<br \/>\n5 C. cubed peeled baking potato (about 2 1\/2 lb.)<br \/>\n4 C. water<br \/>\n4 1\/2 C. hot cooked basmati rice<br \/>\n2\/3 C. chopped tomato<\/p>\n<p>Combine first 8 ingredients. Melt butter in a Dutch oven over medium heat; saute onion and garlic 5 minutes. Stir in spice mixture; saute 5 minutes, stirring frequently. Add chicken, and saute for 10 minutes, stirring frequently. Combine the yogurt and tomato paste; stir with a whisk. Add yogurt mixture, potato, and water to pan. Bring to a boil; cover, reduce heat, and simmer for 1 hour, stirring occasionally.
