{"id":18988,"date":"1987-02-08T12:18:45","date_gmt":"1987-02-08T19:18:45","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=18988"},"modified":"2016-08-07T12:19:28","modified_gmt":"2016-08-07T19:19:28","slug":"island-chicken-with-pineapple-salsa","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=18988","title":{"rendered":"Island Chicken with Pineapple Salsa"},"content":{"rendered":"<p>16 ounces boneless, skinless chicken<br \/>\n1 can (8 ounces) unsweetened crushed pineapple, juice only, (reserve fruit for salsa)<br \/>\n1 T. low-sodium soy sauce<br \/>\n1 T. honey<br \/>\n2 cloves garlic, minced<br \/>\n1\/4 tsp. red pepper flakes<\/p>\n<p>Pineapple from strained can<br \/>\n3\/4 C. brown sugar<br \/>\n1 mango, peeled and diced<br \/>\n2 kiwis, peeled and diced<br \/>\n1\/4 C. red onion, diced fine<br \/>\n1 lime, juiced<br \/>\n1 T. cilantro, chopped<br \/>\n1 T. jalapeno pepper, diced fine (optional)<\/p>\n<p>Open pineapple and strain to separate juice from fruit. Place juice in a baking dish. Add soy sauce, honey, garlic and red pepper to the dish and stir. Slice chicken breasts into 4 4-ounce strips. If thick, pound out to flatten with a meat mallet or rolling pin. Place chicken in the marinade and refrigerate for 2 hours or overnight. Prepare salsa by combining all ingredients. Preheat grill to medium heat or turn on broiler and place rack in the middle of the oven, about 6&#8243; away from the heat source. Grill or broil chicken for 4-5 minutes per side or until the meat is no longer pink.
