{"id":1862,"date":"2009-02-22T19:34:05","date_gmt":"2009-02-23T02:34:05","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=1862"},"modified":"2010-06-20T15:25:40","modified_gmt":"2010-06-20T22:25:40","slug":"flaxseed-falafel-sandwich","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=1862","title":{"rendered":"Flaxseed Falafel Sandwich"},"content":{"rendered":"<p>1\/3 C. flaxseed<br \/>\n1 (19-oz.) can chickpeas (garbanzo beans)<br \/>\n2 garlic cloves, crushed<br \/>\n1\/4 C. chopped fresh parsley<br \/>\n2 T. fresh lemon juice<br \/>\n1 tsp. ground cumin<br \/>\n1\/2 tsp. salt<br \/>\n1\/4 tsp. ground coriander<br \/>\n1\/4 tsp. ground red pepper<br \/>\n1\/4 C. dry breadcrumbs<br \/>\n1 T. flaxseed<br \/>\n1 large egg white, lightly beaten<br \/>\n1 tsp. olive oil<br \/>\nCooking spray<br \/>\n4 (6-inch) pitas, cut in half<br \/>\n8 curly leaf lettuce leaves<br \/>\n<a href=\"https:\/\/pcgirl.net\/recipes\/archives\/001466.html\">Mediterranean Chopped Salad<\/a><br \/>\n1\/2 C. plain fat-free yogurt<\/p>\n<p>Place 1\/3 C. flaxseed in a blender or clean coffee grinder, and process until ground to measure 1\/2 C. flaxseed meal; set flaxseed meal aside. Drain chickpeas over a bowl, reserving liquid. Place chickpeas, garlic, and 1 T. reserved liquid in blender; pulse 5 times or until coarsely chopped. Add flaxseed meal, parsley, and next 5 ingredients (parsley through red pepper); pulse just until mixture is combined. Divide chickpea mixture into 8 equal portions, shaping each into a 1\/2-inch-thick patty. Combine breadcrumbs and 1 T. flaxseed in a shallow dish. Dip patties in egg white; dredge in breadcrumb mixture. Heat the oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add patties; cook 5 minutes on each side or until browned. Line each pita half with a lettuce leaf; fill each pita half with 1 patty and about 3 T. Mediterranean Chopped Salad. Top each with 1 T. yogurt.
