EVOO<br \/>\n3 Scalliosn, sliced<br \/>\n3 oz. Spanish Chorizo, chopped finely<\/p>\n<p>Preheat broiler and position a rack 8 inches from heat. In large bowl, beat eggs. Add potato chips and let sock for 10 minutes. In large oven-proof skillet, heat oil until shimmering. Odd scallions and chorizo and cook over high heat, stirring, until chorizo has rendered its fat, about 2-3 minutes. Add egg mixture, stirring to combine with sausage and scallions. Cook over medium high heat until the bottom and sides are set, about 3 minutes. Place in oven and broil until the top is lightly browned and the eggs are set through, 3-4 minutes longer.
