{"id":1745,"date":"2004-05-09T10:34:39","date_gmt":"2004-05-09T17:34:39","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=1745"},"modified":"2004-05-09T10:34:39","modified_gmt":"2004-05-09T17:34:39","slug":"tomato-carrot-soup","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=1745","title":{"rendered":"Tomato-Carrot Soup"},"content":{"rendered":"<p>1 T. olive oil<br \/>\n6 scallions, thinly sliced (1 cup)<br \/>\n1 large clove garlic, minced<br \/>\n3 C. canned tomatoes, coarsely chopped with their juice<br \/>\n1 cup carrot juice<br \/>\n3\/4 tsp. salt<br \/>\n1\/2 tsp. ground cumin<br \/>\n1\/4 tsp. ground ginger<br \/>\n1\/4 tsp. pepper<br \/>\n1\/2 cup evaporated milk (using evaporated skim milk might also work and cut some fat and calories, but I haven&#8217;t figured the alternate yet since I haven&#8217;t tried it)<\/p>\n<p>In medium saucepan, heat oil over low heat. Add scallions and garlic and cook, stirring occasionally, until softened, about 3 minutes. Add tomatoes and their juice, cook for 5 minutes, stirring occasionally until lightly thickened. Stir in carrot juice, salt, cumin, ginger, and pepper. Simmer, uncovered, for 5 minutes or until flavors have blended.
