Salt<br \/>\n1 1\/2 C. Sugar<br \/>\n1 T. ground Mustard<br \/>\n1 T. Mustard Seed<br \/>\n1 T. Celery Seed<br \/>\n1 T. Allspice<br \/>\n1 T. Whole Black Peppercorns<br \/>\n4 C. Vinegar<\/p>\n<p>Use fairly small green tomatoes. Cut out the stem end and slice into 1\/2\u00e2\u20ac\u009d thick slices. Slice onion. Place in large bowl and sprinkle with salt; let stand overnight. Drain well. Place spices in small bag made of layered cheesecloth. Combine remaining ingredients in a large kettle, add the spice bag, and simmer about 5 minutes. Add onions and tomatoes, remove spice bag, return to a simmer and cook one minute. Seal in hot sterilized jars. Yields about six pints.
