Place all ingredients except oil in a bowl and mix well. Pour oil in a skillet to a 1\/8 inch depth and heat over medium heat. Drop batter into hot oil 1 heaping tsp. at a time to make 8 fritters. Fry about 5 minutes on one side, turn, and fry until golden brown on the other side. Sprinkle lightly with additional Parmesan Cheese if desired.
