Heat oil in heavy-bottomed saut\u00c3\u00a9 pan. Add fennel and saut\u00c3\u00a9 until almost tender. Add leeks; saut\u00c3\u00a9 for about 1 minute longer. Add thyme, clam juice, and wine; bring to a simmer. Arrange salmon steaks on top of vegetables; season with salt and pepper. Cover fish with foil; bake at 400 degrees for 6 to 8 minutes.<\/p>\n<p>&nbsp;<\/p>\n<p>Sauce<\/p>\n<p>2 teaspoons sesame oil, divided<br \/>\n1 tablespoon peeled fresh ginger, minced<br \/>\n2 garlic cloves minced<br \/>\n1\/2 cup red bell pepper, diced small<br \/>\n1\/2 cup green onions, sliced on the bias<br \/>\n1 tablespoon curry powder<br \/>\n1 tablespoon red curry paste<br \/>\n1\/2 teaspoon ground cumin<br \/>\n1 tablespoon low-sodium soy sauce<br \/>\n1 tablespoon brown sugar<br \/>\n1 14-ounce can coconut milk<br \/>\n2 tablespoon chopped fresh cilantro<\/p>\n<p>Heat oil in a heavy-bottomed sauce pan; add ginger, garlic, red pepper and onions. Saut\u00c3\u00a9 until tender, about 2 to 3 minutes. Add remainder of ingredients, except cilantro. Bring to a simmer; reduce by 1\/3 the original volume, stirring occasionally to prevent sticking. Remove from heat; stir in cilantro. Set aside and keep warm.<\/p>\n<p align=\"LEFT\">Noodles and Dressing<\/p>\n<ul>\n<li>8 ounces dried soba (Japanese buckwheat) noodles, cooked el dente<\/li>\n<li>1\/3 cup rice vinegar<\/li>\n<li>1 tablespoon vegetable oil<\/li>\n<li>1 tablespoon soy sauce<\/li>\n<li>1-1\/4 cups sugar<\/li>\n<li>3\/4 teaspoon salt<\/li>\n<li>1\/2 cup chopped fresh mint<\/li>\n<li>1 tablespoon toasted sesame seeds<\/li>\n<\/ul>\n<p align=\"LEFT\">While noodles are cooking, combine vinegar, oil, soy sauce, sugar and salt in a sauce pan; simmer over medium heat until salt and sugar are dissolved and sauce is slightly thickened. Toss noodles with Dressing; garnish with mint and sesame seeds. Place a portion of noodles in center of a large serving plate.
