Spray large nonstick skillet with cooking spray. Heat over high heat until hot. Add sausage; cook and stir 10 to 15 minutes or until sausage is brown. Add onion, pepper and celery; cook an additional 3 minutes. Spoon into 1 1\/2-quart casserole. Add tomatoes, orzo, water and thyme; cover. Bake 1 hour, stirring after 30 minutes, or until heated through. Add olive oil; stir to combine. Let stand, covered, 10 minutes before serving.
