Salsa<\/p>\n<p>Spray large non stick skillet with non stick cooking spray.  Add peppers and onion; cook and stir over medium high heat 5 minutes or until tender.  Remove from skillet and set aside.  Whisk together eggs and egg whites with 1\/4 C. water.  Pour eggs into skillet; cover.  Cook 6 minutes.  Top with pepper mixture and cheese.  Using spatula fold egg mixture over filling and cover.  Cook 3 minutes until cheese melts.
