{"id":1588,"date":"2004-02-21T20:48:53","date_gmt":"2004-02-22T03:48:53","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=1588"},"modified":"2004-02-21T20:48:53","modified_gmt":"2004-02-22T03:48:53","slug":"lemon-lime-shrimp-salad","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=1588","title":{"rendered":"Lemon-Lime Shrimp Salad"},"content":{"rendered":"<p>1 clove garlic<br \/>\n3 T. lemon juice<br \/>\n1 T. hoisin sauce<br \/>\n1\/8 tsp. red pepper flakes<br \/>\nPinch of white pepper<br \/>\n1 lb. medium peeled shrimp<br \/>\n1 medium head cabbage, finely shredded<br \/>\n1 carrot, grated<br \/>\n1 C. chopped watercress<br \/>\n1\/3 C. lime juice<br \/>\n2 T. honey<br \/>\n1\/2 tsp. salt (optional)<br \/>\n2 ripe tomatoes, quartered<br \/>\n2 T. chopped fresh basil<br \/>\n2 T. roasted chopped peanuts<br \/>\nCrushed red pepper flakes<\/p>\n<p>In a blender, combine garlic, lemon juice, hoisin sauce, red pepper flakes and white pepper. Puree until smooth. Marinate shrimp for 20 minutes. Combine cabbage, carrot and watercress in a large bowl. Mix together the lime juice, honey and salt and toss with salad. Cook shrimp in a non-stick pan with the marinade for 2-3 minutes or until it turns pink. Mound salad mixture on four plates.
