(16-oz. can) tomatoes<br \/>\n2 c. chopped green pepper<br \/>\n1 tsp. chili powder<br \/>\n2 Tbsp. brown sugar<br \/>\n2 tsp. dry mustard<br \/>\n\u00c2\u00bc tsp. oregano or cumin<\/p>\n<p>Soak beans using preferred method. Combine soaked, drained beans, 6 c. water, salt, ham, onion, garlic and bay leaf in a large kettle. Cover and simmer until beans are tender (one hour). Add remaining ingredients, cover and simmer to 165 F, about two hours.
