{"id":138,"date":"2002-06-22T12:07:24","date_gmt":"2002-06-22T19:07:24","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=138"},"modified":"2002-06-22T12:07:24","modified_gmt":"2002-06-22T19:07:24","slug":"caribbean-chicken","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=138","title":{"rendered":"Caribbean Chicken"},"content":{"rendered":"<p>1 pound chicken breast, cut into 2 inch pieces<br \/>\nFat free cooking spray<br \/>\n1 can (14 1\/2oz) no salt diced tomatoes, undrained<br \/>\n1 medium bell pepper, diced as small or as big as you like<br \/>\n1 medium onion, chopped (about 1 cup)<br \/>\n1 clove garlic, minced<br \/>\n4 cups of hot cooked brown rice (prepared in low sodium chicken broth adds flavor)<\/p>\n<p>Caribbean seasoning:<\/p>\n<p>2 T. oat flour<br \/>\n2 tsp ground allspice<br \/>\n1\/2 tsp paprika<br \/>\n1\/2 tsp pepper<br \/>\n1\/2 tsp cumin (ground or seed)<br \/>\n1\/4 tsp ground red pepper (more if you like it hot!)<\/p>\n<p>Prepare Caribbean Seasoning, and shake chicken in bag to coat with seasoning mix.   Spray nonstick pan with spray and add chicken.  Stir fry over medium heat 7-10 min or till no longer pink.  Stir in tomatoes, bell pepper, onion, and garlic.  Heat to boiling, then reduce heat.  Cover &#038; simmer 5-10 minutes or until vegetables are the way you like.
