Vegetable Oil<\/p>\n<p>3\/4 C. Vegetable Oil<\/p>\n<p>3 small Shallots, quartered<\/p>\n<p>3-6 T. Hot Water<\/p>\n<p>1\/3 C. Red Wine Vinegar<\/p>\n<p>2 T. Dijon Mustard<\/p>\n<p>Salt and Pepper<\/p>\n<p>6 T. Vegetable Oil<\/p>\n<p>6 T. Butter<\/p>\n<p>2 1\/2 lb. Cusk, Cod, Halibut or Swordfish fillets cut into 6 serving pieces<\/p>\n<p>Salt and Pepper<\/p>\n<p>Watercress for garnish<\/p>\n<p>&nbsp;<\/p>\n<p>Steam leaks until just tender about 4 to 5 minutes.\u00c2\u00a0 Drain well and refresh with cold water; drain again and pat dry.\u00c2\u00a0 Place in a roasting pan large enough to hold leeks in a single layer.\u00c2\u00a0 Season with salt and pepper and sprinkle with 3 T. oil.\u00c2\u00a0 In small saucepan, heat 3\/4 C. oil with shallots until they begin to sizzle.\u00c2\u00a0 Remove from heat and let cool to room temperature, 10 to 15 minutes.\u00c2\u00a0 In blender combine 3 T. hot water, vinegar, salt and pepper to taste.\u00c2\u00a0 With motor running, slowly add oil and shallot mixture.\u00c2\u00a0 If too thick, add remaining 3 T. hot water a little bit at a time, until mixture reaches desired consistency.\u00c2\u00a0 Adjust seasonings and set aside.\u00c2\u00a0\u00c2\u00a0 Preheat oven to 450F.\u00c2\u00a0 In a large skillet, heat 2 T. oil over medium high heat.\u00c2\u00a0 When oil is hot, add 2 T. butter.\u00c2\u00a0 When butter melts add 2 pieces of fish and brown on both sides.\u00c2\u00a0 Place fish on top of leeks.\u00c2\u00a0 Pour off butter mixture.\u00c2\u00a0 Repeat process until all fish is browned.\u00c2\u00a0 Place roasting pan in oven and roast until cooked through, 10 to 12 minutes, depending on thickness.\u00c2\u00a0 Remove from oven.\u00c2\u00a0 Divide fish and leeks among 6 serving plates.\u00c2\u00a0 Pour dressing around fish and garnish with watercress.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Yield:<\/p>\n<p>Calories:<\/p>\n<p>Fat:<\/p>\n<p>Fiber:<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>6 Leeks, about 1\u00e2\u20ac\u009d diameter, split lengthwise, cleaned and trimmed to include tender green Salt and Pepper 3 T.
