{"id":13521,"date":"1998-06-21T22:16:20","date_gmt":"1998-06-22T05:16:20","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=13521"},"modified":"2017-03-21T11:52:20","modified_gmt":"2017-03-21T18:52:20","slug":"mixed-sweet-bell-pepper-california-avocado-salad","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=13521","title":{"rendered":"Mixed Sweet Bell Pepper &#038; California Avocado Salad"},"content":{"rendered":"<div>\n<p>6 small red bell peppers<\/p>\n<\/div>\n<p>6 small green bell peppers<\/p>\n<p>2 T. chopped walnuts<\/p>\n<p>2 T. olive oil<\/p>\n<p>1\/4 C. sherry vinegar<\/p>\n<p>1\/2 C. chopped fresh basil<\/p>\n<p>1 10 oz. package frozen corn<\/p>\n<p>12 Boston lettuce leaves<\/p>\n<p>1 California avocado, peeled, sliced<\/p>\n<p>18 hard breadsticks<\/p>\n<p>Salt, to taste<\/p>\n<p>Black pepper, to taste<\/p>\n<p>&nbsp;<\/p>\n<p>Over flame on gas stove or barbecue (or under broiler of oven) &#8216;blister&#8217; bell peppers until the skin is dark and blistered.\u00c2\u00a0 While still warm put in plastic bags and seal tightly.\u00c2\u00a0 Leave for approximately 15 minutes (this will help with peeling the peppers).\u00c2\u00a0 Peel and seed the peppers, cut into small strips and reserve approximately 3 oz.\u00c2\u00a0 of each (red and green) for each serving of salad. In a bowl mix walnuts, olive oil, sherry wine vinegar, basil and cooled strips of red and green bell peppers.\u00c2\u00a0 Add corn to the mixture in bowl, mixing well.
