Coat a 9&#8243; deep-dish pie plate with cooking spray. Place the apples, butter, and brown sugar in the dish. Stir to combine. Cover with plastic wrap, leaving a corner vent. Microwave on high power, stirring once, for 6 minutes, or until partially cooked. Meanwhile, measure the milk in a large measuring cup. Add the eggs. Beat with a fork until smooth. Add the baking mix and cinnamon. Mix just until no longer dry. Pour the batter over the apple mixture. Bake for 30 to 35 minutes, or until puffed and golden. Dust with confectioners&#8217; sugar.
