Quaker Oats (quick or old fashioned, uncooked), divided<br \/>\n2 T. firmly packed brown sugar<br \/>\n1 C. all-purpose flour (add an additional 2 T. if using old fashioned oats)<br \/>\n1\/2 C. granulated sugar<br \/>\n1 T. baking powder<br \/>\n1\/4 tsp. salt (optional)<br \/>\n1 C. skim milk<br \/>\n2 egg whites, lightly beaten<br \/>\n2 T. vegetable oil<br \/>\n1 tsp. grated lemon peel<br \/>\n1 tsp. vanilla<br \/>\n1 C. fresh or frozen blueberries (do not thaw)<\/p>\n<p>Heat oven to 400\u00b0F. Line 12 medium muffin cups with paper baking cups. For topping, combine 1\/4 C. oats and brown sugar; set aside. For muffins, combine 1-1\/2 C. oats with remaining dry ingredients in large bowl; mix well. In small bowl, combine milk, egg whites, oil, lemon peel and vanilla; mix well. Add to dry ingredients; stir until moistened. Gently stir in berries. Fill muffin cups almost full; sprinkle with topping. Bake 20 to 24 minutes or until light golden brown. Cool muffins in pan on wire rack for five minutes; remove from pan.
