{"id":13237,"date":"1998-03-22T22:50:45","date_gmt":"1998-03-23T05:50:45","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=13237"},"modified":"2022-07-25T16:51:28","modified_gmt":"2022-07-25T23:51:28","slug":"yellow-heirloom-tomato-insalata-caprese-on-grilled-garlic-toasts","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=13237","title":{"rendered":"Yellow Heirloom Tomato Insalata Caprese on Grilled Garlic Toasts"},"content":{"rendered":"<div>\n<p><a href=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2014\/01\/tomato.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-13238\" src=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2014\/01\/tomato.png\" alt=\"tomato\" width=\"280\" height=\"211\" srcset=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2014\/01\/tomato.png 400w, https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2014\/01\/tomato-300x225.png 300w\" sizes=\"auto, (max-width: 280px) 100vw, 280px\" \/><\/a>1\/2 loaf bread, sliced 3\/4 inch thick\u00a0 (something with a nice crust and a soft middle, like a country French bread)<\/p>\n<\/div>\n<p>Olive oil<\/p>\n<p>1 garlic clove, sliced in half lengthwise (through the stem end)<\/p>\n<p>1 bunch fresh basil, some leaves whole, stripped from the stem and some very thinly sliced into a chiffonade<\/p>\n<p>1 large ball of buffalo mozzarella, sliced<\/p>\n<p>3 yellow heirloom tomatoes, sliced<\/p>\n<p>Kosher salt and freshly ground black pepper<\/p>\n<p>2 tsp. or so good balsamic vinegar<\/p>\n<p>&nbsp;<\/p>\n<p>First make the garlic toasts.\u00a0 Heat a cast iron grill pan over high heat for 5 minutes, until it&#8217;s super freaking hot.\u00a0 Mean while brush both sides of the bread slices with the olive oil.\u00a0 Place the bread slices in the grill pan and press down slightly.\u00a0 Grill the bread for about two minutes per side, until the edges get crusty and there are light grill marks.\u00a0 Remove the bread from the pan and rub one side of each slice with the garlic.\u00a0 Continue doing this until all the bread is grilled. To assemble, place the grilled bread on a serving dish or platter. Top each slice with several whole basil leaves (putting the basil down first prevents the bread from getting soggy), then slices of mozzarella, and finally slices of tomato.\u00a0 The number of slices you use depends on how big the toasts are.\u00a0 Using the same brush you used to brush oil on the bread, brush the tops of the tomatoes with some more oil and then season with kosher salt and freshly ground black pepper.\u00a0 You could drizzle it with the oil, rather than brushing, but I find I have more control using a brush.\u00a0 Next spoon a little of the balsamic vinegar over the tomato and then finally scatter with the sliced basil.
