Olive Oil<\/p>\n<p>6-8 oz. Wild Mushrooms, such as Shiitakes, portobelos or crimini, thinly sliced<\/p>\n<p>1 lb. Smoked or Hot Italian Sausage Links cut in 1\u00e2\u20ac\u009d lengths (kielbasa)<\/p>\n<p>1 jumbo Red Onion, thinly sliced<\/p>\n<p>2-3 cloves Garlic, minced<\/p>\n<p>1 dried Red Chile Pepper, crumbled<\/p>\n<p>4 C. canned Tomato Puree<\/p>\n<p>1 lb. Tri-Colored Fusilli Pasta<\/p>\n<p>1 C. Quark (or substitute 1 C. whole milk ricotta mixed with 1\/4 C. low fat sour cream)<\/p>\n<p>1\/2 C. Sour Cream<\/p>\n<p>1\/2 Parmesan Cheese<\/p>\n<p>Pepper<\/p>\n<p>4 basil Leaves, julienned<\/p>\n<p>&nbsp;<\/p>\n<p>Preheat oven to 500.\u00a0 Lightly oil a shallow 3 quart oval baking dish.\u00a0 Fill soup pot with water, add salt and place over medium high heat.\u00a0 Meanwhile in large saut\u00e9 pan heat 3 T. oil over medium heat.\u00a0 Add mushrooms and cook, stirring, for one minute.\u00a0 Cover and cook another 4 minutes.\u00a0 Remove cover, add sausage and cook, stirring often, until sausage is heated through and lightly browned, about 5 minutes (If using uncooked Italian sausage, cook longer, until cooked through).\u00a0 Add more oil if needed and stir in onion, garlic and chile.\u00a0 Cook, stirring often, until onions are tender about 10 minutes.\u00a0 Add tomato puree and cook until sauce is heated through and very hot.\u00a0 Meanwhile cook pasta in boiling water for about 12 minutes or 4 minutes less than the package instructions suggest; pasta should still be somewhat tough.\u00a0 Drain and reserve.\u00a0 Add quark, sour cream and 1\/4 C. parmesan to sauce.\u00a0 Stir in pasta, pepper and basil.\u00a0 Pour in prepared baking dish and sprinkle evenly with remaining quarter C. parmesan.\u00a0 Bake for 15 minutes or until top is crusty.\u00a0 Serve immediately.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Yield:<\/p>\n<p>Calories:<\/p>\n<p>Fat:<\/p>\n<p>Fiber:<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Salt 3-4 T.
