{"id":12885,"date":"2013-12-04T20:31:43","date_gmt":"2013-12-05T03:31:43","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=12885"},"modified":"2013-12-31T20:32:10","modified_gmt":"2014-01-01T03:32:10","slug":"mixed-mushroom-soup","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=12885","title":{"rendered":"Mixed Mushroom Soup"},"content":{"rendered":"<div>\n<p>1 oz. dried porcini mushrooms<\/p>\n<\/div>\n<p>2 T. olive oil<\/p>\n<p>2 leeks, halved lengthwise, thinly sliced and rinsed<\/p>\n<p>Coarse salt and ground black pepper<\/p>\n<p>1 garlic clove, minced<\/p>\n<p>1 lb. assorted fresh mushrooms, such as white button, cremini, oyster, and shiitake (stemmed), rinsed and chopped<\/p>\n<p>1\/2 tsp. fennel seeds<\/p>\n<p>2 bay leaves<\/p>\n<p>1 T. tomato paste<\/p>\n<p>1 can (14 1\/2 oz.) diced tomatoes, drained<\/p>\n<p>1\/2 C. marsala wine (optional)<\/p>\n<p>4 C. vegetable broth<\/p>\n<p>&nbsp;<\/p>\n<p>Soak porcini in 1 C. warm water until softened, about 20 minutes. Lift porcini from liquid and coarsely chop; strain liquid through a cheesecloth-lined sieve and reserve. In a large pot, heat oil over medium. Add leeks; season with salt and pepper and cook for 5 minutes or until tender. Add garlic, porcini, and chopped mushrooms, season with salt and pepper, and cook for 7 minutes or until mushrooms just begin to brown. Add fennel seeds, bay leaves, tomato paste, and tomatoes, and cook for 3 minutes. Add marsala (if using), porcini liquid, and broth. Reduce heat to low and simmer for 30 minutes.
