{"id":12853,"date":"2013-11-22T18:10:21","date_gmt":"2013-11-23T01:10:21","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=12853"},"modified":"2013-12-31T18:12:23","modified_gmt":"2014-01-01T01:12:23","slug":"asparagus-soup-with-roasted-shallots-and-morels","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=12853","title":{"rendered":"Asparagus Soup with Roasted Shallots and Morels"},"content":{"rendered":"<div>\n<p>1 small onion, coarsely chopped<\/p>\n<\/div>\n<p>1 tsp. finely chopped garlic<\/p>\n<p>2 1\/2 T. canola oil<\/p>\n<p>2 pounds asparagus, cut into 1\/2-inch lengths<\/p>\n<p>6 C. chicken stock or canned low-sodium broth<\/p>\n<p>1\/2 C. dried morel or porcini mushrooms (about 1\/2 ounce)<\/p>\n<p>2 C. hot water<\/p>\n<p>2 large shallots, thinly sliced<\/p>\n<p>Salt and freshly ground pepper<\/p>\n<p>&nbsp;<\/p>\n<p>In a large saucepan, combine the onion, garlic and 2 T. of the oil and cook over moderately high heat, stirring, until softened, about 5 minutes. Add the asparagus and cook for 5 minutes, stirring. Add the chicken stock and bring to a boil. Reduce the heat to moderately low and cook until the asparagus are very tender, about 30 minutes. \u00c2\u00a0Preheat the oven to 350\u00c2\u00b0. In a bowl, soak the morels in the hot water until softened, about 20 minutes. Swirl to dislodge any grit; drain and chop.<\/p>\n<p>In a pie plate, toss the morels, shallots, remaining 1\/2 T. of oil and a pinch each of salt and pepper. Bake for about 15 minutes, or until the shallots are softened and lightly browned. \u00c2\u00a0Working in batches, puree the soup in a blender. Return the soup to the saucepan and season with salt and pepper.
