{"id":12370,"date":"2013-06-15T21:43:56","date_gmt":"2013-06-16T04:43:56","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=12370"},"modified":"2013-12-10T21:46:59","modified_gmt":"2013-12-11T04:46:59","slug":"winter-vegetable-curry-in-a-hurry","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=12370","title":{"rendered":"Winter Vegetable Curry in a Hurry"},"content":{"rendered":"<div>\n<p>&nbsp;<\/p>\n<\/div>\n<p><a href=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2013\/12\/currt.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright  wp-image-12371\" alt=\"currt\" src=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2013\/12\/currt.jpg\" width=\"320\" height=\"320\" srcset=\"https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2013\/12\/currt.jpg 400w, https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2013\/12\/currt-150x150.jpg 150w, https:\/\/pcgirl.net\/recipes\/wp-content\/uploads\/2013\/12\/currt-300x300.jpg 300w\" sizes=\"auto, (max-width: 320px) 100vw, 320px\" \/><\/a>3 T. extra-virgin olive oil (EVOO)<\/p>\n<p>1 1\/2 C. basmati rice<\/p>\n<p>1 quart chicken or vegetable broth<\/p>\n<p>1 fresh or dried bay leaf<\/p>\n<p>Grated zest of 1 lemon<\/p>\n<p>2 tsp. ground coriander<\/p>\n<p>2 tsp. ground cumin<\/p>\n<p>1 tsp. ground turmeric<\/p>\n<p>1\/2 tsp. ground cardamom (optional)<\/p>\n<p>1 T. butter<\/p>\n<p>1 small head cauliflower, chopped<\/p>\n<p>1 eggplant, peeled and chopped (I leave on half the skin-I like the color and texture it gives the dish)<\/p>\n<p>1 red bell pepper, seeded and chopped<\/p>\n<p>1 onion, thinly sliced<\/p>\n<p>3 cloves garlic, chopped<\/p>\n<p>One 14.5-oz. can fire-roasted diced tomatoes, drained<\/p>\n<p>One 15-oz. can chickpeas, drained<\/p>\n<p>3 T. mild or hot curry paste<\/p>\n<p>3 T. mango chutney<\/p>\n<p>Salt and freshly ground pepper<\/p>\n<p>3 scallions, chopped, for garnish<\/p>\n<p>Cilantro or parsley, chopped (a generous handful)<\/p>\n<p>Slivered almonds or chopped cashews, toasted, for garnish<\/p>\n<p>&nbsp;<\/p>\n<p>In a large saucepan, heat 1 T. EVOO, 1 turn of the pan, over medium heat. Add the rice and toast for 1 to 2 minutes. Stir in 3 C. chicken broth, the bay leaf, lemon zest, coriander, cumin, turmeric and cardamom. Cover the pan and bring to a boil. Reduce the heat and simmer for 18 minutes. Fluff the rice with a fork and discard the bay leaf. Add the butter and toss to evenly coat the rice; set aside. While the rice cooks, in a large, deep nonstick skillet, heat the remaining 2 T. EVOO, 2 turns of the pan, over medium-high heat. Add the cauliflower, eggplant, bell pepper, onion and garlic; cover and cook, stirring occasionally, until tender, 7 to 8 minutes. Uncover and stir in the tomatoes, chickpeas, curry paste and chutney; season with salt and pepper. Stir in the remaining 1 C. chicken broth and simmer for 6 to 7 minutes. Serve the vegetable curry with scoops of rice on top.
