Flour<\/p>\n<p>2 T. sugar<\/p>\n<p>1 T. Baking Powder<\/p>\n<p>1\/2 tsp. Baking Soda<\/p>\n<p>1 tsp. Salt<\/p>\n<p>1 2\/3 C. Buttermilk<\/p>\n<p>6 T. Butter, melted<\/p>\n<p>1\/4 C. Vegetable Oil<\/p>\n<p>2 large Eggs, beaten<\/p>\n<p>1 Red Serrano or Jalapeno Pepper, stemmed, seeded, and minced<\/p>\n<p>1\/3 C. minced Scallions<\/p>\n<p>3 T. minced Cilantro<\/p>\n<p>1 T. minced Chives<\/p>\n<p>&nbsp;<\/p>\n<p>Oil a 9\u00e2\u20ac\u009d cast iron skillet well.\u00c2\u00a0 Combine cornmeal, flour, sugar, baking powder, baking soda and salt and sift into the howl of an electric mixer.\u00c2\u00a0 Combine buttermilk, melted butter, oil and eggs in another mixing bowl.\u00c2\u00a0 With mixer running on low or with a wooden spoon, add buttermilk mixture to the dry ingredients and mix well.\u00c2\u00a0 Scrape sides of bowl once.\u00c2\u00a0 Add chile pepper, scallions, cilantro and chives; mix briefly.\u00c2\u00a0 Let batter rest for 15 minutes.\u00c2\u00a0 Preheat oven to 400 degrees.\u00c2\u00a0 Heat skillet in the preheated oven for 5 minutes.\u00c2\u00a0 Pour batter into hot skillet.\u00c2\u00a0 Bake for 30 minutes or until a toothpick comes out clean.\u00c2\u00a0 When done, turn corn bread out of the pan onto a rack and let cool slightly before serving.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Yield:<\/p>\n<p>Calories:<\/p>\n<p>Fat:<\/p>\n<p>Fiber:<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1 1\/2 C. stone ground Cornmeal, fine grind preferred 1 C.
