Lean Ground beef (nutritional info based on 7% fat beef)<br \/>\n1 &#8211; 2 onions, chopped<br \/>\n2-3 Cloves Garlic, minced<br \/>\n1-2 Bell Peppers, seeded and chopped<br \/>\n1-2 C. sliced raw Mushrooms<br \/>\n14oz. Can Pinto or Black beans, drained<br \/>\n28oz. Canned Tomatoes, drained<br \/>\n1 tsp. Oregano<br \/>\n1\/2 tsp. Cumin<br \/>\n1\/2 tsp. Cayenne pepper<br \/>\n1\/2 tsp. Black pepper<\/p>\n<p>Brown meat in non-stick Dutch oven or large pot along with onion, bell pepper and garlic over medium heat until meat is fully cooked. Drain off any oil. Add spices and beans, stir for one minute, cooking over medium heat. Add tomatoes and bring to a boil. Stir in mushrooms. Lower heat and simmer on low for 10-15 minutes, stirring occasionally.<\/p>\n<p>Yield: 4 servings<br \/>\nServing Size: 1\/4 recipe, between 1-2 C. depending on how many veggies are added<\/p>\n<p>Calories: 275<br \/>\nFat: 8.5g<br \/>\nFiber: 6.2g<\/p>\n<p><em>Notes: I generally use 1 onion, 2 peppers, and 2 cups of mushrooms to really bulk up the chili and make it more filling. <\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>1 lb.
