Put a lid on the pan, then turn down the heat and cook slowly for about 2 hours, or until the beans are completely soft, adding water as necessary. Blend by hand or machine until smooth and set aside.<\/p>\n<p>While the dried beans are cooking, blanch the fresh beans in boiling unsalted water for a couple of minutes, then drain and peel off the skins.\u00c2\u00a0 In a separate pan, heat a little olive oil, then add the diced onion, carrot and celery and cook until soft but not colored.
